1lb Chicken wings 2 tablespoons Jerk seasoning (I use Grace) Dash of liquid smoke Vegetable oil to fry
8 cloves garlic minced 1 cup of fresh orange juice (freshly squeezed or no sugar added juice from concentrate) 2/3 cup of fresh lime juice 1/2 cup olive oil 1 teaspoon dried oregano 1 teaspoon cumin A pinch of pure stevia extract
Curry Blue Cheese Sauce
2 1/2 ounces crumbled blue cheese 3 tablespoons buttermilk 3 tablespoons sour cream 2 tablespoons mayonnaise 2 teaspoons white wine vinegar 2 teaspoons curry powder 1/8 teaspoon garlic powder 1/8 teaspoon ginger powder A few sprigs of cilantro Kosher salt and freshly ground black pepper to taste
Marinate chicken for at least 2 hours or overnight in jerk seasoning and liquid smoke.
For mojo sauce combine all ingredients into a medium sized sauce pan. Whisk then set aside.
For curry blue cheese combine all ingredients in a bowl. Set in refrigerator until it's time to serve.
Pre heat deep fryer to 375. Pat wings dry before dropping in oil. Fry wings for approx 10 mins or until they begin to float. Blot excess oil. Toss fried wings in mojo sauce. Serve with cilantro curry blue cheese and celery.
